NETA Bicuixe + Madrecuixe + Tepextate + Jabalín Agave Spirit (750ml / 46%)

NETA Bicuixe + Madrecuixe + Tepextate + Jabalín Agave Spirit is a four-agave 2022 ensamble made by Wilfrido García Sánchez in Logoche, Miahuatlán. The plants were selected from neighbouring family parcels and wild hillsides, then cooked, fermented and distilled together as a genuine field blend.

The recipe combines 20% Bicuixe, 20% Madrecuixe, 40% Tepextate and 20% Jabalín. After a five-day roast with mesquite and guamúchil wood, the agave rested for three days, was processed by machete and mechanical shredder, and fermented with native yeast in Montezuma cypress vats. Wilfrido distilled it twice in copper and composed the final spirit from heads, hearts and high-proof tails.
